Ingredients
- 8–10 Frozen Soup Dumplings
- 1 tbsp neutral oil
- 1 tbsp Thai red curry paste
- 1 cup chicken stock or vegetable stock
- 1/3 cup coconut milk
- 1 tsp fish sauce
- 1 tsp sugar
- 2 kaffir lime leaves
- Fresh Thai basil leaves
Instructions
- Heat the neutral oil in a large pot over medium-high heat. Sauté the Thai red curry paste for 1-2 minutes until fragrant.
- Pour in the chicken or vegetable stock and stir until the curry paste dissolves completely.
- Add coconut milk, fish sauce, sugar, and kaffir lime leaves. Mix well and bring the sauce to a gentle simmer.
- Carefully place frozen soup dumplings into the simmering sauce. Cover with a lid and cook for about 12 minutes or until fully cooked.
- Stir in fresh Thai basil leaves before serving hot.
