- 1 baguette
- 1/2 cup olive oil
- 12 cloves garlic (peeled and finely sliced)
- 2 tablespoons smoked Spanish paprika
- 8 cups vegetable broth
- 2 teaspoons salt (optional)
- 2 tablespoons apple juice vinegar
- 3 large eggs (whisked)
Instructions
- Peel and finely slice the garlic cloves. Slice the baguette into thick pieces.
- In a large pot, heat olive oil over medium heat until shimmering. Add sliced garlic and fry until golden brown.
- Stir in smoked paprika and mix for about 30 seconds to release its flavor.
- Gradually pour in vegetable broth while stirring continuously. Bring to a gentle boil.
- Season with salt if needed and stir in apple juice vinegar.
- Reduce heat to low and slowly whisk in the eggs until fully incorporated.
- Serve warm over slices of baguette or croutons.
