Ingredients
- 1 chicken breast, cut into cubes
- 1 tsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp chili powder or cayenne
- Salt & pepper to taste
- 1 cucumber, sliced
- 5–6 cherry tomatoes, halved
- 2 tbsp red onion, chopped
- 1 tbsp chopped mint or parsley
- Squeeze of lemon juice
- 1 cup cooked white rice
- 1 avocado, sliced
- 1 tbsp spicy mayo (mayo + sriracha mix)
- Optional: baby spinach or mixed greens
Instructions
- Toss the chicken cubes with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Heat your skillet over medium heat. Sear the chicken for about 5-6 minutes until browned and fully cooked.
- In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, mint or parsley, lemon juice, salt, and pepper. Toss well to ensure everything is coated evenly. Chill in the refrigerator while preparing other components.
- Start by layering cooked rice at the bottom of your bowl. If using baby spinach or mixed greens, add them on top of the rice. Next, place grilled chicken cubes over the greens followed by avocado slices. Top it off with cucumber salad and drizzle with spicy mayo. Finish with freshly cracked pepper for added flavor.
