  • 2 cups fresh spinach
  • 8 oz low-moisture mozzarella
  • 3 cloves garlic
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil for cooking

Instructions

  1. Sauté minced garlic in olive oil until fragrant, then add fresh spinach until wilted. Allow to cool slightly before chopping.
  2. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and cooled spinach until just combined.
  3. Take a portion of the meat mixture, flatten it in your palm, place a cube of mozzarella in the center, and seal it around the cheese to form a ball.
  4. Heat olive oil in a skillet over medium heat and sear the meatballs for about 2–3 minutes on each side until golden brown.
  5. Finish cooking by covering the skillet on low heat for another 5–7 minutes or transfer to a preheated oven at 375°F (190°C) for 10–12 minutes.
