- 4 chicken breasts
- 4 ounces cream cheese (softened)
- ¼ cup grated Parmesan
- 1 ½ cups chopped fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt (divided)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 teaspoon garlic (minced)
- ½ teaspoon red pepper flakes
- 2 tablespoons mayonnaise
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Drizzle chicken breasts with olive oil and season with paprika, garlic powder, onion powder, and salt on both sides.
- Carefully cut pockets into the side of each chicken breast.
- In a mixing bowl, combine cream cheese, Parmesan, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and remaining salt until well mixed.
- Stuff each chicken breast pocket evenly with the filling mixture.
- Place the stuffed chicken in a greased baking dish and bake for 25-30 minutes or until fully cooked.
