- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 teaspoon baking soda
- 2 1/2 teaspoons pumpkin spice
- 15 oz pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 4 oz cream cheese
- 2 tablespoons granulated sugar
- 1 tablespoon flour
- 1 teaspoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, mix cream cheese with sugar, flour, milk, and vanilla until smooth; set aside.
- In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking soda, and pumpkin spice.
- In another bowl, whisk together pumpkin puree, vegetable oil, eggs, and vanilla until blended.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fill muffin cups halfway with batter; add a spoonful of cream cheese filling on top before covering with more batter.
- Bake for about 25 minutes or until a toothpick comes out clean.
- Cool for five minutes in the pan before transferring to a wire rack.
