- 1 small steak (sirloin, flank, or ribeye ~4–5 oz)
- 2 eggs
- 1 small sweet potato, halved and roasted
- diced avocado
- 1 cup raspberries
- 1 cup blueberries
- Salt & pepper to taste
- 1 tsp olive oil
Instructions
- Preheat oven to 400°F (200°C). Place halved sweet potato on a baking sheet and roast for 30-35 minutes until fork-tender.
- Season steak with salt and pepper. In a hot cast iron skillet with olive oil, sear the steak for about 3-4 minutes per side for medium doneness. Let rest before slicing.
- In the same skillet, fry two eggs sunny-side up or to your liking; season lightly.
- Assemble the plate by arranging roasted sweet potato halves alongside sliced steak, fried eggs, diced avocado, and fresh berries.
