Ingredients
- 1 small steak (sirloin, flank, or ribeye ~4–5 oz)
- 2 eggs
- 1 small sweet potato
- Diced avocado
- 1 cup raspberries
- 1 cup blueberries
- Salt & pepper to taste
- 1 tsp olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C). Roast the halved sweet potato on a baking tray for 30-35 minutes until tender.
- While the sweet potato roasts, season your steak with salt and pepper. Sear it in a hot skillet with olive oil for about 3-4 minutes on each side for medium doneness. Let it rest before slicing.
- In the same skillet, fry the eggs sunny-side up to your liking, seasoning them with salt.
- Assemble your plate by placing the roasted sweet potato halves down first, followed by sliced steak, fried eggs, diced avocado, and fresh berries.
