Ingredients
- 2 cups shredded chicken
- 1 cup BBQ sauce
- 1/2 cup shredded cheese
- 4 medium zucchinis
- Olive oil (for brushing)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and cut them in half lengthwise. Scoop out some flesh to create space for filling.
- In a mixing bowl, combine shredded chicken and BBQ sauce; season with salt and pepper.
- Place hollowed zucchinis in a baking dish, generously fill each with the chicken mixture.
- Sprinkle cheese on top and drizzle with olive oil.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
