  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add beef belly pieces and sear until browned on all sides (about 5–7 minutes). Remove beef from the pan.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir to coat evenly.
  4. Bring to a boil over medium-high heat. Reduce heat to low and simmer uncovered for 1 to 1½ hours until beef is tender and sauce thickens into a sticky glaze.
  5. Adjust seasoning if needed before serving hot over steamed rice or with vegetables. Garnish with chopped green onions and sesame seeds.
