- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup pureed fresh strawberries
- A few drops of pink food coloring (optional)
- 1 cup powdered sugar
- 2–3 tablespoons fresh strawberry puree
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C) and grease a bundt pan.
- In a bowl, whisk together the flour, baking soda, and salt.
- Cream butter and sugar together until light and fluffy. Add eggs one at a time, mixing well after each.
- Mix buttermilk and strawberry puree in another bowl.
- Gradually add dry ingredients alternately with the buttermilk mixture to the wet ingredients until just combined.
- Pour batter into the prepared pan and bake for 70-80 minutes until a toothpick comes out clean.
- Cool before glazing with powdered sugar mixed with strawberry puree and lemon juice.
