  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup pureed fresh strawberries
  • A few drops of pink food coloring (optional)
  • 1 cup powdered sugar
  • 23 tablespoons fresh strawberry puree
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a bundt pan.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. Cream butter and sugar together until light and fluffy. Add eggs one at a time, mixing well after each.
  4. Mix buttermilk and strawberry puree in another bowl.
  5. Gradually add dry ingredients alternately with the buttermilk mixture to the wet ingredients until just combined.
  6. Pour batter into the prepared pan and bake for 70-80 minutes until a toothpick comes out clean.
  7. Cool before glazing with powdered sugar mixed with strawberry puree and lemon juice.
