- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries (chopped)
- ¼ cup granulated sugar (for filling)
- 8 oz semi-sweet chocolate (chopped)
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix eggs, milk, vegetable oil, and vanilla until smooth. Gradually combine with dry ingredients.
- Slowly add boiling water to the batter until well mixed.
- Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool for about 10 minutes before transferring to a rack.
- For the strawberry filling: cook chopped strawberries with sugar over medium heat for about five minutes. Mix in lemon juice and cornstarch mixture until thickened; set aside to cool.
- For the ganache: heat cream until simmering; pour over chopped chocolate and whisk until smooth.
- Assemble the cake by layering one cake with half of the strawberry filling, adding the second layer on top, and covering with ganache.
