  • 1 ½ tsp baking soda

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla until smooth. Gradually combine with dry ingredients.
  4. Slowly add boiling water to the batter until well mixed.
  5. Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool for about 10 minutes before transferring to a rack.
  6. For the strawberry filling: cook chopped strawberries with sugar over medium heat for about five minutes. Mix in lemon juice and cornstarch mixture until thickened; set aside to cool.
  7. For the ganache: heat cream until simmering; pour over chopped chocolate and whisk until smooth.
  8. Assemble the cake by layering one cake with half of the strawberry filling, adding the second layer on top, and covering with ganache.
