Instructions
- Preheat oven to 400°F (204°C) and line baking sheets with parchment paper.
- In a bowl, combine sliced strawberries with sugar and cornstarch; let sit for 15 minutes.
- Mix cream cheese with powdered sugar and vanilla until smooth.
- Unfold puff pastry, cut into rectangles, and score edges.
- Spread cream cheese filling in the center of each rectangle, top with strawberries, brush edges with egg wash, and sprinkle sugar if desired.
- Chill assembled danishes for 15-20 minutes before baking.
- Bake for 20-25 minutes until golden brown; cool slightly before serving.
