  • 2 cups fresh or frozen strawberries, chopped
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ cup unsalted butter, cold and cubed
  • ½ teaspoon vanilla extract

Instructions

  1. In a saucepan over medium heat, combine strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook until thickened (about 5-7 minutes). Allow to cool.
  2. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  3. In a bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Stir in vanilla extract along with honey or maple syrup until combined.
  5. Press two-thirds of the crumble into the pan. Spread cooled strawberry filling evenly on top and sprinkle remaining crumble mixture over it.
  6. Bake for 35-40 minutes until golden brown. Let cool before slicing.
