Ingredients
- 2 cups fresh or frozen strawberries, chopped
- 2 tablespoons granulated sugar (or honey)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 ½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup light brown sugar
- ½ cup unsalted butter, cold and cubed
- ½ teaspoon vanilla extract
Instructions
- In a saucepan over medium heat, combine strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook until thickened (about 5-7 minutes). Allow to cool.
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
- Stir in vanilla extract along with honey or maple syrup until combined.
- Press two-thirds of the crumble into the pan. Spread cooled strawberry filling evenly on top and sprinkle remaining crumble mixture over it.
- Bake for 35-40 minutes until golden brown. Let cool before slicing.
