  • 4 (6-ounce) salmon fillets
  • 2 tablespoons olive oil
  • 3 cups baby spinach
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Pinch of cayenne pepper
  • 5.3 ounces feta cheese
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped roasted red peppers
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place salmon on the baking sheet, skin-side down. Cut a pocket in each fillet lengthwise without cutting all the way through.
  3. Brush salmon with 1 tablespoon olive oil; season with salt and pepper.
  4. In a large pan, heat remaining olive oil over medium heat. Sauté spinach with Italian seasoning, paprika, cayenne pepper, salt, and pepper until wilted.
  5. Remove from heat; stir in roasted red peppers, feta, and parmesan until well combined.
  6. Stuff each salmon pocket with the filling.
  7. Bake for 12-17 minutes until salmon is cooked through.
