Ingredients
- 4 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- 3 cups baby spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Pinch of cayenne pepper
- 5.3 ounces feta cheese
- ¼ cup grated parmesan cheese
- ¼ cup chopped roasted red peppers
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon on the baking sheet, skin-side down. Cut a pocket in each fillet lengthwise without cutting all the way through.
- Brush salmon with 1 tablespoon olive oil; season with salt and pepper.
- In a large pan, heat remaining olive oil over medium heat. Sauté spinach with Italian seasoning, paprika, cayenne pepper, salt, and pepper until wilted.
- Remove from heat; stir in roasted red peppers, feta, and parmesan until well combined.
- Stuff each salmon pocket with the filling.
- Bake for 12-17 minutes until salmon is cooked through.
