Ingredients
- 5 cups sweet potato (peeled and cubed)
- 1 cup apple (such as Gala or Golden Delicious)
- 1 tbsp olive oil
- 1 shallot (chopped)
- 3 1/2 cups low sodium vegetable broth
- 1/4 tsp cinnamon
- 1/8 tsp fresh nutmeg
- Pinch of kosher salt
- Fresh pepper (optional)
Instructions
- Heat olive oil in a medium-sized soup pan over medium heat.
- Sauté chopped shallots until translucent, about 3-4 minutes.
- Add sweet potatoes and diced apples with a pinch of salt; stir well and sauté for another 3 minutes.
- Pour in enough vegetable broth to cover the vegetables completely.
- Bring to a gentle simmer and cook until tender, about 15-20 minutes.
- Blend the soup until smooth using an immersion blender or in batches with a traditional blender; adjust consistency with more broth if desired.
- Stir in cinnamon, nutmeg, and season to taste before serving hot.
