- 1/2 cup sweet potato puree
- 1/2 cup peanut butter
- 1/3 cup unsweetened cocoa powder
- 1/3 cup honey or maple syrup
- 2 large eggs
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup all-purpose flour (or gluten-free flour)
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare an 8×8-inch baking dish by greasing or lining it with parchment paper.
- Cook and mash the sweet potato until smooth.
- In a bowl, mix sweet potato puree, peanut butter, honey or maple syrup, and eggs until creamy.
- Add cocoa powder, flour, salt, and baking powder to the wet mixture and gently mix.
- Pour the batter into the prepared dish and bake for 25 to 30 minutes until a toothpick comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack to cool completely.
