- 1 and 1/2 cups milk (dairy or non-dairy)

- 1/2 cup pure maple syrup
- 1/2 cup unsweetened applesauce
- 3 cups old-fashioned whole oats
- 1 teaspoon baking powder
- 1 and 1/2 teaspoons cinnamon powder
- 1/4 teaspoon nutmeg powder
- 1/2 teaspoon vanilla essence
- 1 generous cup chopped peeled apple
- Optional: nuts for added texture
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a large mixing bowl, whisk together the milk, eggs, maple syrup, applesauce, and vanilla essence.
- 3. In another bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
- 4. Gradually mix the dry ingredients into the wet ingredients until just combined.
- 5. Fold in the chopped apples and nuts if using.
- 6. Grease a muffin tin or use liners; fill each cup about three-quarters full with the batter.
- 7. Bake for approximately 28 minutes until golden brown on top and set in the center.
- 8. Allow to cool slightly before serving or storing.
