Ingredients
- 1½ cups chocolate cookie crumbs (or graham crackers + 2 tbsp cocoa)
- ¼ cup unsalted butter, melted
- 3 large eggs
- 1 cup light corn syrup
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- ¼ cup unsweetened cocoa powder
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix chocolate cookie crumbs and melted butter until combined; press into a parchment-lined 9×9-inch baking pan and chill.
- In a large bowl, whisk eggs until frothy, then add corn syrup, sugars, cocoa powder, vanilla extract, and salt; mix until smooth.
- Fold in chopped pecans and chocolate chips.
- Pour filling over chilled crust; sprinkle additional pecans on top.
- Bake for 35–40 minutes or until edges are set but center is slightly jiggly. Cool completely before topping with ganache and slicing.
