  • 2 cooked chicken breasts, chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted salted peanuts
  • 46 tortillas
  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice apple vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce

Instructions

  1. Prepare the sauce by whisking together peanut butter, soy sauce, brown sugar or honey, rice apple vinegar, garlic, ginger, and sriracha in a bowl.
  2. In a large bowl, mix cooked chicken with coleslaw mix, grated carrot (if using), cilantro, and peanuts. Drizzle with the prepared sauce and toss to combine.
  3. Warm tortillas in the microwave for about 30 seconds until pliable.
  4. Divide the filling among the tortillas and roll them tightly. Serve immediately.
