- 4 cups fresh celery, chopped
- 1 cup raw walnuts, coarsely chopped
- 1/2 cup dried cranberries
- 1/2 medium red onion, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and chop the celery into bite-sized pieces.
- Coarsely chop walnuts; optionally toast in a dry skillet over medium heat for about 5 minutes until fragrant.
- Thinly slice the red onion.
- In a large bowl, combine chopped celery, walnuts, cranberries, and red onion. Toss gently.
- In a separate bowl or jar, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently until evenly coated.
- Serve immediately or let sit for about 15 minutes to allow flavors to meld.
