- 2 1/2 cups ripe strawberries, hulled

Instructions
- Wash and hull the strawberries. Optionally mash some for a smoother texture.
- In a medium saucepan over medium heat, combine strawberries, sugar, vanilla (if using), lemon juice, cornstarch, and water. Stir well.
- Cook until the mixture bubbles, then reduce heat to low and simmer for 5-7 minutes until thickened.
- Adjust thickness by adding water if necessary.
- Remove from heat and cool completely before using.
