- 1 ½ cups fresh strawberries, finely chopped and lightly dusted with 1 tablespoon flour
- 1 cup powdered sugar
- 1 to 2 tablespoons milk
- ½ teaspoon vanilla extract
- 2 tablespoons strawberry puree (optional, for flavor and color)
Instructions
- Preheat oven to 325°F (165°C). Grease and flour a 10-inch bundt or tube pan.
- In a large mixing bowl, cream together the butter and cream cheese until smooth.
- Gradually add the sugar, beating until light and fluffy.
- Incorporate eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Gently fold in the floured strawberries.
- Pour batter into the prepared pan and smooth the top.
- Bake for 75 to 85 minutes until a toothpick inserted comes out clean.
- Allow to cool in the pan before transferring to a wire rack.
- To make glaze: Whisk powdered sugar with milk and vanilla; drizzle over cooled cake.
