  • ¼ cup glace fruit mix
  • ½ cup glace mixed cherries
  • 1 apple, peeled and grated
  • 1 carrot, peeled and grated
  • Zest and juice of 1 orange
  • 3 tbsp apple juice
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp allspice
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • extra apple juice (for serving)
  • icing sugar (for garnish)
  • ½ cup butter
  • 1 cup granulated sugar
  • ½ cup heavy cream

Instructions

  1. In a large bowl, mix together sultanas, prunes, candied peel, glace fruit mix, glace cherries (halved), grated apple and carrot, orange zest and juice, and apple juice. Let sit for at least one hour.
  2. Prepare your pudding basin by greasing it and lining the bottom with parchment paper.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, cloves, and nutmeg.
  4. In a separate large bowl, cream the softened butter with brown sugar until crumbly. Add the egg and mix well.
  5. Fold the fruit mixture into the butter-sugar blend followed by the dry ingredients until just combined.
  6. Spoon the batter into the prepared basin and cover with parchment paper and foil.
  7. Steam in a pot for about 3 to 4 hours until cooked through (200°F internal temperature).
  8. Allow cooling slightly before unmolding onto a serving plate.
