  • 6 slices thick-cut turkey bacon, chopped
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked and cooled long-grain rice
  • 3 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. In a large skillet over medium heat, cook the chopped turkey bacon until crispy. Remove from the pan and set aside.
  2. In the same skillet, sauté diced onion until translucent, about 3-5 minutes.
  3. Add minced garlic and frozen peas and carrots; cook for another 2-3 minutes.
  4. Stir in cold rice, mixing well for about 2-4 minutes.
  5. Push mixture to one side of the pan; add beaten eggs to the empty side and scramble until cooked through before mixing everything together.
  6. Increase heat to high; add soy sauce, oyster sauce, sesame oil, crispy turkey bacon back to the skillet. Mix well and season with salt and pepper to taste.
  7. Cook for an additional 1-2 minutes; serve hot garnished with green onions.
