- 6 slices thick-cut turkey bacon, chopped
- 1/2 large onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 4 cups cooked and cooled long-grain rice
- 3 large eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 green onions, chopped
Instructions
- In a large skillet over medium heat, cook the chopped turkey bacon until crispy. Remove from the pan and set aside.
- In the same skillet, sauté diced onion until translucent, about 3-5 minutes.
- Add minced garlic and frozen peas and carrots; cook for another 2-3 minutes.
- Stir in cold rice, mixing well for about 2-4 minutes.
- Push mixture to one side of the pan; add beaten eggs to the empty side and scramble until cooked through before mixing everything together.
- Increase heat to high; add soy sauce, oyster sauce, sesame oil, crispy turkey bacon back to the skillet. Mix well and season with salt and pepper to taste.
- Cook for an additional 1-2 minutes; serve hot garnished with green onions.
