Ingredients
- 8 oz fresh or frozen cheese tortellini
- 4 oz thinly sliced turkey slices, chopped
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the tortellini in salted boiling water according to package instructions (3–5 minutes). Drain and cool.
- In a large mixing bowl, combine the cooked tortellini, chopped turkey slices, halved cherry tomatoes, and fresh mozzarella balls.
- Whisk together olive oil, balsamic vinegar, oregano, salt, and pepper in a small bowl until well combined.
- Drizzle the dressing over the salad mixture and toss gently. Refrigerate for at least 30 minutes before serving.
