  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 20 unwrapped caramels
  • 1 tbsp milk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the salted butter and granulated sugar using an electric mixer until light and fluffy.
  3. Add the egg white and vanilla extract, mixing until well combined.
  4. Stir in the all-purpose flour and baking powder until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick; cut into circles with a round cookie cutter.
  6. Place on an ungreased baking sheet and bake for 6-8 minutes until puffy but not glossy.
  7. Cool completely on a wire rack.
  8. Microwave caramels with milk until smooth; spoon onto each cookie.
  9. Chill cookies for 10-15 minutes.
  10. Melt milk chocolate chips; spread over caramel-topped cookies.
