- 1/2 cup salted butter
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg white
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 20 unwrapped caramels
- 1 tbsp milk
- 2 cups milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the salted butter and granulated sugar using an electric mixer until light and fluffy.
- Add the egg white and vanilla extract, mixing until well combined.
- Stir in the all-purpose flour and baking powder until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick; cut into circles with a round cookie cutter.
- Place on an ungreased baking sheet and bake for 6-8 minutes until puffy but not glossy.
- Cool completely on a wire rack.
- Microwave caramels with milk until smooth; spoon onto each cookie.
- Chill cookies for 10-15 minutes.
- Melt milk chocolate chips; spread over caramel-topped cookies.
