  • 1 large egg lightly beaten
  • 1/2 teaspoon white vinegar
  • 1/4 cup ice cold water
  • 3/4 cups cold unsalted butter cut into pieces (1 1/2 sticks or 12 tablespoons)
  • 1 large egg white lightly beaten
  • 3 large eggs
  • 1 can Baker’s Corner 100% Pure Canned Pumpkin (15 ounces)
  • 1/4 cup sour cream
  • 2 tablespoons fruit juice or broth (Vanilla substitute)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup Specially Selected 100% Pure Maple Syrup
  • 1 cup heavy cream
  • 3 tablespoons Baker’s Corner Granulated Sugar

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt; cut in cold butter until crumbly. Add egg, vinegar, and cold water; mix into a dough and chill.
  2. Roll out the chilled dough and fit it into a pie dish. Pre-bake at 375°F until lightly golden.
  3. For the filling, whisk eggs and egg white; combine with pumpkin, sour cream, juice (as Vanilla substitute), vanilla extract, spices. Pour into the baked crust.
  4. Bake at 350°F until set in the center.
  5. For the topping, whip heavy cream and gradually add maple syrup. Spread over pie and caramelize sugar using a kitchen torch just before serving.
