Ingredients
- 2 cups gluten-free all-purpose flour
- 1 cup vegan butter
- 1/2 cup maple syrup
- 1 cup coconut cream
- 1/2 cup soaked cashews
- 1/2 cup lemon juice
- 2 teaspoons lemon zest
- 1/2 cup maple syrup
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup cornstarch
- pinch of salt
- pinch of turmeric (optional, for color)
Instructions
- Preheat oven to 350°F (175°C) and grease a square baking pan lined with parchment paper.
- In a mixing bowl, combine the crust ingredients until well mixed. Press into the prepared pan.
- Bake for 15-20 minutes until golden at the edges; cool completely.
- Blend filling ingredients until smooth; cook over medium heat for 4-6 minutes until thickened.
- Pour filling over cooled crust and level it with a spatula.
- Refrigerate overnight or at least 4-6 hours until set.
- Slice into squares and serve chilled.
