  • 2 cups gluten-free all-purpose flour
  • 1 cup vegan butter
  • 1/2 cup maple syrup
  • 1 cup coconut cream
  • 1/2 cup soaked cashews
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/2 cup maple syrup
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup cornstarch
  • pinch of salt
  • pinch of turmeric (optional, for color)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a square baking pan lined with parchment paper.
  2. In a mixing bowl, combine the crust ingredients until well mixed. Press into the prepared pan.
  3. Bake for 15-20 minutes until golden at the edges; cool completely.
  4. Blend filling ingredients until smooth; cook over medium heat for 4-6 minutes until thickened.
  5. Pour filling over cooled crust and level it with a spatula.
  6. Refrigerate overnight or at least 4-6 hours until set.
  7. Slice into squares and serve chilled.
