  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces white chocolate, melted and cooled
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix the graham cracker crumbs with melted butter. Press evenly into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese with sugar and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Fold in melted white chocolate.
  4. Pour the mixture over the crust and smooth the top. Bake for 50-60 minutes until edges are set but center remains slightly jiggly.
  5. Let cool for about 10 minutes, then prepare topping: heat strawberry jam with heavy cream over low heat until combined.
  6. Remove from pan once cooled, top with sliced strawberries and drizzle with the strawberry ganache.
  7. Refrigerate for at least 4 hours before serving.
