Ingredients

  • 2 medium zucchini, sliced lengthwise
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Layer zucchini slices evenly in the baking dish, sprinkling dried oregano over them.
  3. Spread half of the ricotta cheese on top of the zucchini and add half of the marinara sauce. Repeat with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
  6. Let cool briefly before serving; garnish with fresh basil.
