  • 1 tablespoon fresh lemon zest

  • 3/4 cup cold salted butter
  • 3/4 cup + 2 tablespoons buttermilk
  • 1/4 cup fresh lemon juice
  • 1 to 1 1/4 cups fresh blueberries
  • 2 tablespoons melted butter
  • Coarse or turbinado sugar for sprinkling
  • 1 1/4 cups powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a half sheet pan with parchment paper.
  2. In a large bowl, mix flour, sugar, lemon zest, baking powder, baking soda, and salt until combined.
  3. Grate cold butter into the dry mixture and toss to coat.
  4. Gently fold in the blueberries.
  5. Add buttermilk and lemon juice; mix until just combined.
  6. Turn out the dough onto a floured surface and shape it into a rectangle.
  7. Cut into wedges and place on the baking sheet; brush tops with melted butter and sprinkle with coarse sugar.
  8. Bake for about 15 minutes until golden brown. Cool slightly before drizzling with glaze made from powdered sugar and lemon juice.
