Ingredients
- 3 1/2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon fresh lemon zest
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup cold salted butter
- 3/4 cup + 2 tablespoons buttermilk
- 1/4 cup fresh lemon juice
- 1 to 1 1/4 cups fresh blueberries
- 2 tablespoons melted butter
- Coarse or turbinado sugar for sprinkling
- 1 1/4 cups powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and line a half sheet pan with parchment paper.
- In a large bowl, mix flour, sugar, lemon zest, baking powder, baking soda, and salt until combined.
- Grate cold butter into the dry mixture and toss to coat.
- Gently fold in the blueberries.
- Add buttermilk and lemon juice; mix until just combined.
- Turn out the dough onto a floured surface and shape it into a rectangle.
- Cut into wedges and place on the baking sheet; brush tops with melted butter and sprinkle with coarse sugar.
- Bake for about 15 minutes until golden brown. Cool slightly before drizzling with glaze made from powdered sugar and lemon juice.
