Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried thyme
- 1 medium Granny Smith apple, thinly sliced
- 4 oz light Brie cheese, sliced
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp creamy Dijon mustard
- 1 tsp whole grain Dijon mustard
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Using a sharp knife, slice each chicken breast horizontally to create a pocket.
- Stuff the chicken pockets evenly with apple slices and Brie cheese, then fold back over.
- Season both sides of the stuffed chicken with salt, pepper, and thyme.
- In a large skillet over medium-high heat, sear the chicken for about 1-2 minutes on each side until golden brown. Transfer to the baking sheet.
- In a small bowl, whisk together maple syrup and both types of Dijon mustard; brush over the tops of the chicken.
- Bake for 20-25 minutes until cooked through.
