- 0.75 cup granulated sugar (or coconut sugar)
- 1 teaspoon cinnamon
- 1 cup milk
- 0.5 cup vegetable oil (or melted coconut oil)
- 1 large egg
- 0.5 cup apple butter
- 0.25 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners or greasing it.
- In a mixing bowl, combine flour, baking powder, sugar, and cinnamon.
- In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- For the swirl mixture, combine apple butter, brown sugar, and additional flour in a separate bowl until crumbly.
- Spoon half the muffin batter into each muffin cup, then add a layer of swirl mixture followed by the remaining batter.
- Bake for about 22 minutes or until a toothpick inserted comes out clean.
