  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9 x 4 inch baking tin lined with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. Cream butter and granulated sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla.
  4. Gradually fold in half of the dry mixture followed by buttermilk. Mix until just combined and avoid overmixing.
  5. Toss diced apples with brown sugar and cinnamon in a separate bowl.
  6. Layer half the batter in the prepared tin, add half the apple mixture, swirl gently, then top with remaining batter and apples.
  7. Bake for 55-65 minutes until a toothpick inserted comes out clean. Cool before slicing.
