Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 medium apples (peeled and diced)
- 1/3 cup brown sugar
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9 x 4 inch baking tin lined with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
- Cream butter and granulated sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla.
- Gradually fold in half of the dry mixture followed by buttermilk. Mix until just combined and avoid overmixing.
- Toss diced apples with brown sugar and cinnamon in a separate bowl.
- Layer half the batter in the prepared tin, add half the apple mixture, swirl gently, then top with remaining batter and apples.
- Bake for 55-65 minutes until a toothpick inserted comes out clean. Cool before slicing.
