- 1 cup plus 1 tablespoon all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 2 medium very ripe bananas
- 1/3 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 2 rounded tablespoons sour cream (or Greek yogurt)
- 2 tablespoons creamy peanut butter
- 1 teaspoon vanilla extract
- Optional: 3/4 cup walnuts or mini semi-sweet chocolate chips
Instructions
- Preheat the air fryer to 330°F (165°C). Grease a nonstick baking dish.
- In a medium bowl, whisk flour, baking powder, salt, and baking soda.
- In a large bowl, mash the bananas until smooth using a fork.
- Add sugar, oil, egg, sour cream, peanut butter, and vanilla to the mashed bananas; whisk until combined.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Optionally mix in walnuts or chocolate chips.
- Pour the batter into the prepared dish and spread evenly.
- Bake in the air fryer for about 30 to 40 minutes, checking at 25 minutes for doneness.
- Allow cooling for about 10 minutes before slicing.
