- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease a loaf tin and line it with baking paper.
- In a large mixing bowl, mash the overripe bananas until smooth. Add canola oil, milk, both sugars, eggs, and vanilla extract; stir until combined.
- Sift together the plain flour, baking powder, and salt. Gently fold into the wet mixture until just combined; lumps are okay.
- Pour the batter into the prepared loaf tin and bake for 45–55 minutes until golden brown and a skewer inserted comes out clean. Let it cool in the tin for about 10 minutes before transferring it to a wire rack.
