  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs

  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease a loaf tin and line it with baking paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Add canola oil, milk, both sugars, eggs, and vanilla extract; stir until combined.
  3. Sift together the plain flour, baking powder, and salt. Gently fold into the wet mixture until just combined; lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for 45–55 minutes until golden brown and a skewer inserted comes out clean. Let it cool in the tin for about 10 minutes before transferring it to a wire rack.
