  • 2 ½ oz instant banana pudding mix
  • 1 egg
  • 10 vanilla wafers, chopped
  • 1 ½ cups mashed bananas (about 4 medium bananas)
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla bean paste (or extract)
  • 3 TBSP instant banana pudding mix
  • ¼ cup milk
  • 1 cup powdered sugar
  • 3 vanilla wafers, finely crushed like a powder

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5 loaf pan with baking spray and parchment paper.
  2. For the filling, beat together cream cheese and pudding mix until smooth. Add egg and vanilla extract, then fold in chopped vanilla wafers.
  3. For the banana bread batter, whisk flour, baking soda, and salt in one bowl. In another bowl, mix mashed bananas and sugar for about three minutes before adding oil and eggs one at a time.
  4. Gradually combine dry ingredients into wet ingredients until just mixed.
  5. Layer half of the banana batter in the prepared pan, followed by the pudding filling, then top with remaining batter.
  6. Bake for 45-55 minutes or until a toothpick comes out clean.
  7. Let cool before drizzling with glaze made from vanilla bean paste, milk, powdered sugar, and crushed wafers.
