  • 250 g caster sugar
  • 1 teaspoon vanilla extract
  • 4 medium eggs
  • 250 g self-raising flour
  • 3 tablespoons milk
  • Zest of 1 orange
  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice
  • 12 tablespoons orange zest

Instructions

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10 inch baking tin with baking paper.
  2. In a large mixing bowl, whisk together softened butter and caster sugar until light and fluffy. Stir in vanilla extract.
  3. Add eggs one at a time, mixing well after each addition. Gradually add self-raising flour and milk until smooth, then fold in orange zest.
  4. Pour the batter into the prepared tin, smoothing the top with a spatula. Bake for 25–30 minutes or until a toothpick comes out clean.
  5. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
