Ingredients
- 250 g softened butter
- 250 g caster sugar
- 1 teaspoon vanilla extract
- 4 medium eggs
- 250 g self-raising flour
- 3 tablespoons milk
- Zest of 1 orange
- 200 g icing sugar
- 2 tablespoons freshly squeezed orange juice
- 1–2 tablespoons orange zest
Instructions
- Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10 inch baking tin with baking paper.
- In a large mixing bowl, whisk together softened butter and caster sugar until light and fluffy. Stir in vanilla extract.
- Add eggs one at a time, mixing well after each addition. Gradually add self-raising flour and milk until smooth, then fold in orange zest.
- Pour the batter into the prepared tin, smoothing the top with a spatula. Bake for 25–30 minutes or until a toothpick comes out clean.
- Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
