Ingredients
- 5 oz baby spinach (washed and stems removed)
- 1/2 pint blueberries (washed)
- 1 medium green apple (thinly sliced or diced)
- 2.25 oz slivered almonds
- 1/3 C mayonnaise
- 1/4 C orange juice
- 2 tsp white apple vinegar
- 2 tsp poppy seeds
- 1 tsp lemon juice
- 1 tsp sugar
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/4 tsp ground white pepper
- 1/8 tsp garlic powder
Instructions
- In a large mixing bowl, combine the washed spinach, blueberries, sliced green apple, and slivered almonds. Toss gently to mix.
- In a separate bowl, whisk together mayonnaise, orange juice, white apple vinegar, lemon juice, sugar, ground ginger, salt, ground white pepper, and garlic powder until smooth. Stir in poppy seeds.
- Drizzle the dressing over the salad just before serving and toss gently to coat.
