  • 1/2 pint blueberries (washed)
  • 1 medium green apple (thinly sliced or diced)
  • 2.25 oz slivered almonds
  • 1/3 C mayonnaise
  • 1/4 C orange juice
  • 2 tsp white apple vinegar
  • 2 tsp poppy seeds
  • 1 tsp lemon juice
  • 1 tsp sugar
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper
  • 1/8 tsp garlic powder

Instructions

  1. In a large mixing bowl, combine the washed spinach, blueberries, sliced green apple, and slivered almonds. Toss gently to mix.
  2. In a separate bowl, whisk together mayonnaise, orange juice, white apple vinegar, lemon juice, sugar, ground ginger, salt, ground white pepper, and garlic powder until smooth. Stir in poppy seeds.
