  • 2 teaspoons canola oil
  • 4 slices turkey bacon (cooked and crumbled)
  • ½ cup shredded cheddar cheese
  • 4 large eggs
  • ¼ cup heavy cream
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon kosher salt

Instructions

  1. Preheat oven to 350°F.
  2. Prick potatoes with a fork, coat in canola oil, sprinkle with salt, and bake for 1 hour or until tender.
  3. Let cool slightly, then cut in half and scoop out the insides into a mixing bowl.
  4. Combine potato filling with butter, heavy cream, crumbled turkey bacon (reserve some for topping), cheddar cheese, and seasonings until smooth.
  5. Fill potato skins with the mixture and create a well in each.
  6. Crack an egg into each well and top with remaining turkey bacon. Bake for an additional 15-20 minutes until eggs are set.
  7. Garnish with minced chives before serving warm.
