- 2 large potatoes
- 2 teaspoons canola oil
- 4 slices turkey bacon (cooked and crumbled)
- ½ cup shredded cheddar cheese
- 4 large eggs
- ¼ cup heavy cream
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- ½ teaspoon kosher salt
Instructions
- Preheat oven to 350°F.
- Prick potatoes with a fork, coat in canola oil, sprinkle with salt, and bake for 1 hour or until tender.
- Let cool slightly, then cut in half and scoop out the insides into a mixing bowl.
- Combine potato filling with butter, heavy cream, crumbled turkey bacon (reserve some for topping), cheddar cheese, and seasonings until smooth.
- Fill potato skins with the mixture and create a well in each.
- Crack an egg into each well and top with remaining turkey bacon. Bake for an additional 15-20 minutes until eggs are set.
- Garnish with minced chives before serving warm.
