- 2 1/4 cups mashed ripe bananas (about 5 medium)
- 2 cups granulated sugar
- 1/2 cup unsalted butter (room temperature)
- 2 large eggs (room temperature)
Instructions
- Preheat your oven to 300°F (150°C). Prepare two 9×5-inch loaf pans by buttering them and lining them with parchment paper.
- In a mixing bowl, whisk together flour, salt, baking powder, and baking soda. If using pecans, add them here.
- In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, then fold in mashed bananas.
- Gradually combine the dry ingredients with the wet mixture while alternating with buttermilk until just mixed.
- Pour the batter into prepared pans and bake for about one hour or until golden brown and firm to touch.
