  • 1/4 cup mayo

Instructions

  1. Slice both apples into matchstick pieces and toss them with lemon juice in a bowl to prevent browning. Let sit for 5 minutes.
  2. In a large mixing bowl, combine matchstick carrots, diced onion, and dried cranberries. Add soaked apples once ready.
  3. In a separate bowl, mix vanilla yogurt, mayonnaise, sugar, salt, and pepper until smooth.
  4. Fold the dressing into the salad mixture gently; then add the mandarins.
