- 1/2 cup butter, softened
- 3/4 cup granulated sugar

- 1/4 tsp ground ginger
- 1/4 tsp ground all spice
- 1 cup shredded carrots
- 8 oz cream cheese
- 1/2 cup butter (for frosting)
- 1 cup powdered sugar
- 1 tsp vanilla extract (for frosting)
- 3/4 tsp ground cinnamon (for frosting)
- 1/2 cup crushed pecans (for garnish)
- 1/4 cup shredded carrots (for garnish)
Instructions
- Preheat the oven to 350°F (175°C) and grease two loaf pans.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and all spice.
- Gradually add dry ingredients to wet ingredients until just combined; fold in shredded carrots gently.
- Divide batter into prepared loaf pans and bake for about 35 minutes or until a toothpick inserted comes out clean.
- For frosting (optional), beat cream cheese and butter until creamy; gradually add powdered sugar and mix in vanilla extract and cinnamon.
