  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 cup shredded carrots
  • 8 oz cream cheese
  • 1/2 cup butter (for frosting)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 3/4 tsp ground cinnamon (for frosting)
  • 1/2 cup crushed pecans (for garnish)
  • 1/4 cup shredded carrots (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two loaf pans.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and all spice.
  4. Gradually add dry ingredients to wet ingredients until just combined; fold in shredded carrots gently.
  5. Divide batter into prepared loaf pans and bake for about 35 minutes or until a toothpick inserted comes out clean.
  6. For frosting (optional), beat cream cheese and butter until creamy; gradually add powdered sugar and mix in vanilla extract and cinnamon.
