  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1½ cups cold unsalted butter (cubed)
  • 2 large eggs
  • ½ cup ice water
  • 1 tablespoon lemon juice
  • 6 to 7 cups sliced apples (peeled and cored)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Whisk together flour, sugar, and salt in a large bowl.
  2. Add cold butter and work it into the flour with a pastry cutter until you have coarse crumbs.
  3. In a small bowl, whisk eggs, ice water, and lemon juice together. Pour over flour mixture and stir until dough just comes together.
  4. Split dough into two pieces (one bigger than the other). Flatten into rectangles, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. In a large bowl, toss apple slices with both sugars, cornstarch, cinnamon, nutmeg, salt, lemon juice, and vanilla until well combined.
  6. Preheat oven to 375°F (190°C). Spray a 9×13-inch pan with cooking spray.
  7. Roll out the larger piece of dough to fit your pan with an overhang. Press it into the bottom of the pan.
  8. Spread apple filling evenly over the bottom crust.
  9. Roll out the remaining dough piece to cover the filling. Trim edges as needed; crimp with a fork. Cut vents in top crust for steam release.
  10. Bake in preheated oven for 45 to 50 minutes until golden brown and bubbling.
  11. Cool completely on a wire rack before glazing.
  12. In a mixing bowl, whisk together powdered sugar, milk, vanilla extract, and melted butter until smooth.
  13. Spread glaze evenly over cooled apple slices once they have completely cooled down.
  14. Allow glaze to set for about 15 minutes before cutting into squares and serving.
