Ingredients

  • Chicken thighs (bone-in, skin-on)
  • Water
  • Fresh parsley
  • Olive oil
  • Yellow onion
  • Celery stalks
  • Pearl couscous
  • Fresh dill
  • Lemon juice
  • Seasoning salt

Instructions

  1. In a large pot, add enough water to cover the chicken thighs and bring it to a boil.
  2. Add the chicken thighs to the boiling water. Reduce heat to low and incorporate diced onion, celery, parsley, and seasoning salt.
  3. Simmer for 1 hour until the chicken is fully cooked.
  4. Remove the chicken and stir in the pearl couscous into the broth; simmer for an additional 10–12 minutes.
  5. Shred the cooled chicken and return it to the pot along with fresh dill and lemon juice; stir well and let simmer for another 5 minutes.
  6. Adjust seasoning if necessary and serve hot.
