Ingredients
- Chicken thighs (bone-in, skin-on)
- Water
- Fresh parsley
- Olive oil
- Yellow onion
- Celery stalks
- Pearl couscous
- Fresh dill
- Lemon juice
- Seasoning salt
Instructions
- In a large pot, add enough water to cover the chicken thighs and bring it to a boil.
- Add the chicken thighs to the boiling water. Reduce heat to low and incorporate diced onion, celery, parsley, and seasoning salt.
- Simmer for 1 hour until the chicken is fully cooked.
- Remove the chicken and stir in the pearl couscous into the broth; simmer for an additional 10–12 minutes.
- Shred the cooled chicken and return it to the pot along with fresh dill and lemon juice; stir well and let simmer for another 5 minutes.
- Adjust seasoning if necessary and serve hot.
