  • Juice from one lime (about 2 tablespoons)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 8 flour or corn tortillas

Instructions

  1. Prepare the seasoning by mixing all spice ingredients in a bowl; set aside.
  2. Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Sauté sliced bell peppers and onion for about 5-7 minutes until softened.
  3. Add minced garlic and half of the seasoning mix; sauté for an additional 2-3 minutes.
  4. Remove vegetables and add remaining olive oil to the skillet. Cook sliced chicken with remaining seasoning and lime juice for about 5-6 minutes until fully cooked.
  5. Combine the sautéed vegetables with the chicken and heat through for an additional minute.
  6. Serve the mixture in warm tortillas with desired toppings.
