- 3 bell peppers (seeded and thinly sliced)
- 1 medium yellow onion (thinly sliced)
- 1 ¼ lb boneless chicken breasts (sliced into thin strips)
- 2 tablespoons olive oil (divided)
- Juice from one lime (about 2 tablespoons)
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon fine sea salt
- ½ teaspoon ground pepper
- 8 flour or corn tortillas
Instructions
- Prepare the seasoning by mixing all spice ingredients in a bowl; set aside.
- Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Sauté sliced bell peppers and onion for about 5-7 minutes until softened.
- Add minced garlic and half of the seasoning mix; sauté for an additional 2-3 minutes.
- Remove vegetables and add remaining olive oil to the skillet. Cook sliced chicken with remaining seasoning and lime juice for about 5-6 minutes until fully cooked.
- Combine the sautéed vegetables with the chicken and heat through for an additional minute.
- Serve the mixture in warm tortillas with desired toppings.
