- 2 cups all-purpose flour
- 1/4 cup unsalted butter (cold)
- 1 packet (2 1/4 tsp) active dry yeast
- 3/4 cup whole milk (warm)
- 2 tbsp sugar
- 1/2 cup ricotta cheese
- 1/2 cup dark chocolate chips
- 1/3 cup roasted unsalted pistachios (chopped)
- Egg wash (1 egg + 1 tbsp water)
Instructions
- In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm milk until a sticky dough forms; knead until smooth.
- Roll out dough into a rectangle and encase cold butter between layers of parchment paper before placing it on half of the dough.
- Fold the dough over the butter and chill for at least 30 minutes.
- Roll the chilled dough again and fold into thirds; repeat two more times to create layers.
- Mix ricotta, chopped pistachios, and dark chocolate chips in a bowl until well combined.
- Cut the rolled dough into triangles and fill each with the mixture; roll tightly into crescent shapes.
- Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 20-25 minutes until golden brown.
