Ingredients

  • 1/4 cup unsalted butter (cold)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup whole milk (warm)
  • 2 tbsp sugar
  • 1/2 cup ricotta cheese
  • 1/2 cup dark chocolate chips
  • 1/3 cup roasted unsalted pistachios (chopped)
  • Egg wash (1 egg + 1 tbsp water)

Instructions

  1. In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm milk until a sticky dough forms; knead until smooth.
  2. Roll out dough into a rectangle and encase cold butter between layers of parchment paper before placing it on half of the dough.
  3. Fold the dough over the butter and chill for at least 30 minutes.
  4. Roll the chilled dough again and fold into thirds; repeat two more times to create layers.
  5. Mix ricotta, chopped pistachios, and dark chocolate chips in a bowl until well combined.
  6. Cut the rolled dough into triangles and fill each with the mixture; roll tightly into crescent shapes.
  7. Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 20-25 minutes until golden brown.
