Ingredients
- 3 very ripe bananas
- 2 large handfuls baby spinach
- 3 tablespoons milk (almond or regular)
- 1 egg
- ½ cup sugar
- 1 teaspoon vanilla extract
- ½ cup Greek yogurt (full fat)
- 3 tablespoons oil
- 1 cup white whole wheat flour
- 1 teaspoon baking soda
- ⅔ cup cocoa powder
- ¼ teaspoon sea salt
- ½ cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine milk, bananas, and spinach until smooth.
- In a mixing bowl, add the blended mixture along with the egg, sugar, vanilla, oil, and Greek yogurt. Mix well.
- In another bowl, mix flour, baking soda, cocoa powder, and salt together.
- Gradually fold the dry ingredients into the wet mixture until just combined. Stir in dark chocolate chips.
- Line a muffin pan with liners and fill each cup two-thirds full with batter. Sprinkle extra chocolate chips on top if desired.
- Bake for 18–22 minutes or until a toothpick comes out clean. Cool slightly before serving.
