  • 1 cup freshly grated zucchini (pressed to remove excess water)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter (for cinnamon swirl)
  • 1/4 cup sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon (for cinnamon swirl)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, beat sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well combined.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Prepare the cinnamon filling by mixing melted butter, sugar, and ground cinnamon in a small bowl.
  6. Pour half of the batter into the loaf pan; drizzle half of the cinnamon mixture over it and swirl gently with a knife.
  7. Add the remaining batter and repeat swirling with the remaining filling.
  8. Bake for 45–55 minutes or until a toothpick comes out clean from the center.
  9. Let cool before glazing with a mixture of powdered sugar and milk.
